Like them both. Can't help agree that the colour has such nicely saturated colours it would be a shame not to show them.

Re the original question, I've looked at this a few times today and that mono is growing on me. Initially I was for the colour - now not so sure.

I intentionally shut down the f stop to keep more in the DOF. I would usually shoot at around 5.6 on weddings.

settings were -

F16
1/200th
ISO 200

Always shoot RAW so I can pull back highlights and open up shadows.

Colour for me too. The B&W is also pretty cool but the wedding dress seems to get a bit lost in the shades a bit. This is only my ideato highlight the couple a bit so take it with a grain of salt. I use Photoshop CS6 and automatically open JPG files with Camera Raw to tweak things a bit before bringing it into PS. These are the adjustments I made and then just converted to B&W in PS. It gives it a slight grungy look but really highlights the bride and groom. This may not be for everybody :)
